Jim's favorite ground bison meal is meatloaf, mashed potatoes and fresh green beans. I always make a double batch of Buffaloaf because he loves meatloaf sandwiches. Here are two recipes: the first is a quickie version, the second is an old-fashioned recipe from my mother's 1954 Searchlight Recipe Book.
Easy Buffaloaf
2 lbs ground bison
3/4 cup dry bread crumbs
2 eggs - slightly beaten
1/2 cup ketchup
1 3.5 oz package onion
Mushroom soup mix
2 Tablespoons water
Old Fashioned Buffaloaf
2 lbs ground bison
2 eggs slightly beaten
1/4 cup chopped onion
1/2 tsp pepper
1 cup cracker crumbs
1 cup milk
1 tsp salt (optional)
Preheat oven to 350 degrees.
In large bowl assemble all ingredients and mix well. Grease 9"x13 1/2" baking pan and form a loaf in the center of the pan leaving a generous space on all sides.
Bake for One Hour.
You can dress this up many ways: add cubes of cheese, sliced mushrooms, green peppers or chopped pickles to the mixture. Top it with catsup, chili sauce or barbecue sauce.
