Serves Average Family (see recipe for serving groups below)
 
3 lb. Buffalo Chuck Roast     1 ½ tsp. Bouillon paste
One onion, sliced thin         ½ cup burgundy
1-2 tsp. Minced garlic          3-4 cups water
½ tsp. Pepper     
           
Heat olive oil in a heavy black skillet, brown meat very well on all sides (the secret to dark, rich sauce or gravy is in the browning)
Mix spices (garlic and pepper) and bouillon with the burgundy in a small mixing bowl
Place buffalo roast in slow cooker and cover with sliced onions
Pour spiced burgundy over the roast, add water and cover
Cook for six hours or until meat is falling apart.  Add water as needed so meat does not dry out.
Shred and mix well with sauce.
Spoon generously on fresh sliced French rolls.


   
Buffalo Chuck Roast Recipe For Large Groups
Serves 24


3-4 buffalo chuck roasts (approximately 8 lbs total weight)
 
Olive oil for browning            6 tsp. beef bouillon paste
4 large onions, sliced thin    2 cups burgundy
4-6 tsp. minced garlic          6-8 cups water
2 tsp. pepper
 
Heat olive oil in heavy black skillet, brown meat very well on all sides (the secret to dark, rich sauce or gravy is in the browning!)
Mix spices (garlic & pepper) and bouillon with the burgundy in a small mixing bowl.
Arrange roasts in an electric roaster oven or roasting pan. (Can use crock-pot for family meal)
Pour spiced burgundy over roasts, add water and cover.
Roast at 200 degrees for eight hours or until meat is falling apart.  Add water as needed so meat does not dry out.
Shred and mix well with sauce.
Spoon generously on fresh sliced French rolls
