Since I don't have much time to cook I like super easy recipes where I can cook up some burger and throw stuff together for a delicious meal.  The following nachos recipe is actually fun to make:

BUFFALO CHIPS


INGREDIENTS:
- one pound of ground buffalo
- one medium onion diced (about one cup)
- two or three tablespoons of olive oil
- one to three teaspoons of chili powder
- ten to twelve oz of large tortilla chips
   (about 1/2 a large bag)
- one-half pound of grated Monterey jack cheese
- one-half pound of grated cheddar cheese
- one small can of sliced olives
- one 16 oz. jar of your favorite salsa
- one cup of sour cream
- two ripe mashed avocados or prepared guacamole
- jar of jalapeno peppers

Brown the diced onions in olive oil, add the ground buffalo and cook until it barely loses its "pink" ( Please don't overcook since bison burger can easily dry out!)  Add the chili powder and set aside.
Lightly oil a cooky sheet or large pizza pan.   Place the tortilla chips in a "heap" in the middle of the pan.  Spoon the meat mixture  evenly over the chips.  Add the cheese and spoon on one-half of the sour cream.  Pour on one-half of the salsa.  Garnish with the sliced olives.   Bake in the oven at 400 degrees until cheese is bubbly and slightly browned.  Approximately 20 minutes.
Serve with  mashed avocado and remaining sour cream and salsa in separate dishes along with the jalapeno peppers for the folks that like their nachos extra spicy!  This is one of these ooey, gooey dishes that you set in the middle of the table and everyone gathers round to eat with their fingers.  You'll need lots of napkins.  Serves four. (Or one hungry Packer's fan!)
