This recipe was created by Georgia and Jessie one evening when we were craving Mexican food and wanted to feed a large group. This has now become a family favorite!
1 pound BisonRidge Ranch ground buffalo meat
1 16 oz can refried beans
1 16 oz can corn-drained (optional)
1 3 oz can sliced black olives (optional)
1 16 oz can chopped tomatoes-drained (optional)
2 16 oz can prepared green or red chili
1 8 oz container cottage cheese
1 large bag tortilla chips-broken into pieces
2-3 cups grated cheddar or Cheddar/Monterey Jack combo
Preheat oven to 350 degrees.
Brown BisonRidge Ranch ground bison meat. In a 9 x 13 pan, pour 1/2 cup green or red chili, spread on bottom. Alternate layers of beans, buffalo meat, corn, tomatoes, chili, cheeses and tortilla chips. Finish with layer of chips and sprinkle with cheese and black olives.
Bake in oven for 30-45 minutes until hot and bubbly. Remove and let set for 10 minutes. Cut and serve with your favorite salsa, sour cream and fresh cilantro.
