This chili has become a tradition here at the ranch when we do our yearly round-up! It is easy to make and not too spicy, although you can add more kick if you want to! I don't spend much time in the kitchen so I am well stocked with handy ingredients that can be quickly thrown together for a fast and delicious meal. If you don't have time to chop and dice your veggies and cook dry beans from scratch you'll like this recipe:
INGREDIENTS:
1/4 cup of olive oil
2 pounds of ground bison
2 cups of frozen diced onions
2-3 Tab. minced garlic (jars in the produce department)
2 large cans of whole, peeled tomatoes with juice
2 large cans of dark red kidney beans with the liquid
2 6oz. cans of tomato paste
1/2 cup of dried minced green pepper
2 tsp beef boullion paste
1-2 tsp ground red chili pepper
1 Tab. ground cumin seed
1 Tab oregano
1 bay leaf
1 cup of red wine
1 12 oz. can of generic beer
Heat olive oil in a heavy skillet, add onions, ground meat, and garlic and cook until onions are tender and meat is slightly browned.
In a 6 quart cooker assemble the remaining ingredients and add the onions, ground meat and garlic. Simmer for several hours with the lid off so the liquid can cook down and the chili will thicken. As I mentioned, this is a mild chili so you may want to put a jar of jalapeno peppers on the table for folks that like a little more fire in their chili.
