Bison meat is so flavorful it really is delicious with nothing more than a sprinkle of salt. However, if you want to try some variety let me suggest some ideas:
Bison Burgers
Onion Burgers
Mix one envelope of onion soup mix with two pounds of bison burger, add two well-beaten eggs and one cup of milk. Form into patties.
Stuffed Cheese Burgers
Divide two pounds of bison burgers into 16 chunks, roll into balls and flatten into thin circles. Place a slice of your favorite cheese on a circle. (I love to crumble on Bleu Cheese.) Lay another circle of bison on top and pinch the edges together for a stuffed cheese burger. Salt and pepper to taste.
Teriyaki Burgers
Mix fresh chopped onion, 1/4 cup of teriyaki sauce, 3/4 cup of white wine, and two eggs with two pounds of ground bison. Form into patties.
Chili Burgers
Mix one cup of spicy salsa, 1/2 cup fresh green pepper , 1/2 cup freshly minced onion, and two eggs with two pounds of ground bison. Form into patties.
Helpful grilling hints:
Because bison meat is very lean you must be careful not to cook your burgers too long or at as high a temperature as you would with beef. The more rare the meat the juicier the burger. Always use a cooking spray or brush cooking oil on the grill before grilling your burgers. I love to use the cooking baskets available at any kitchen store. I coat the basket with olive oil and place the burgers inside. Then I can easily turn the burgers all at once and never have to worry about them falling apart. Turn only once!
